Iranians mostly eat at home so learning to cook is essential.
I learned to cook by watching my grandmother and mother cook. These recipes were passed down through the generations through story and flavor memory, without ever looking at a recipe book.
The most important and ubiquitous dish to make is rice & Tahdig, which simply means crunchy bottom rice. Learning to cook ‘Iranian rice’ is like a right of passage. It’s a staple in every dish, so learning to masterfully cook long grain translucent rice is mandatory.
Crispy turnover rice is not only a beautiful centerpiece at the dinner table, it’s a versatile base, filled with many healthy ingredients.
One of my favorite fillings is lentils, used to make crispy turnover rice with lentils, known as Adas Polo. It is a highly nutritious, protein-filled, and flavorful dish that can be made with no animal products.
I think you’ll enjoy the unique combination of spices and herbs.
Culturally, we like to share our food with family, friends, and neighbors so the portions are large by default. So make sure you have hungry guests, neighbors, or room for leftovers.
