Snickerdoodle Cookies

Ingredients

Topping

  • 3 tablespoons sugar
  • 1-1/2 teaspoons ground cinnamon

Cookies

  • 1-1/3 cups flour
  • 3/4 cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoons salt
  • 1 tablespoons ground flax seeds
  • 3 tablespoons water
  • 1/2 cup vegan margarine

Directions

  1. Preheat oven to 400°F (222°C).
  2. In a small bowl, stir together the sugar and cinnamon, and set aside.
  3. In a medium bowl, stir together the flour, sugar, baking powder and salt.
  4. In a small bowl, stir together the flax seeds and water.
  5. Add the margarine and flax mixture to the flour mixture, and stir until well blended.
  6. Shape dough into 1-1/4 inch balls, roll in the cinnamon-sugar mixture, and place on cookie sheet.
  7. Bake for 8-10 minutes.
  8. Remove from oven, and let sit 2-4 minutes before removing to place on cooling rack. Makes 16 cookies.
