Snickerdoodle Cookies
Ingredients

- 3 tablespoons sugar
- 1-1/2 teaspoons ground cinnamon
Cookies
- 1-1/3 cups flour
- 3/4 cup sugar
- 2 teaspoons baking powder
- 1/4 teaspoons salt
- 1 tablespoons ground flax seeds
- 3 tablespoons water
- 1/2 cup vegan margarine
Directions
- Preheat oven to 400°F (222°C).
- In a small bowl, stir together the sugar and cinnamon, and set aside.
- In a medium bowl, stir together the flour, sugar, baking powder and salt.
- In a small bowl, stir together the flax seeds and water.
- Add the margarine and flax mixture to the flour mixture, and stir until well blended.
- Shape dough into 1-1/4 inch balls, roll in the cinnamon-sugar mixture, and place on cookie sheet.
- Bake for 8-10 minutes.
- Remove from oven, and let sit 2-4 minutes before removing to place on cooling rack. Makes 16 cookies.
